Ham and Pesto Croissant

Sometimes the best inspiration comes when you aren't prepared.  I've been making this sandwich for about seven years now, but it all started one day when I was looking around for something last minute to serve my neighbors, the Andertons, for lunch.  This is what came out of my fridge: avacado, pesto, ham, and a croissant.  I put them together and discovered a great taste!  I know it's just a sandwich, but it's funny how I keep coming back to it. 

 It's Simple Gourmet, served up in less time than it takes to get out mayo and slice some cheese. 


Slice a halved avacado lengthwise. Using a spoon, scoop out the slices Layer avacado slices on one half and pesto on the other half of a full size croissant.  I used store bought pesto, although making your own is a good option too.  (See recipe below)

 
Add some good deli ham and lettuce.  This is the easiest gourmet you can find!  

Ham and Pesto Croissant (serves 4)

4 croissants
1 avacado
pesto
lettuce
1lb. thin sliced deli ham

  1. Slice a halved avacado lengthwise.  Using a spoon, scoop out the slices.

  2. Layer avacado slices on one half and pesto on the other half of a full size croissant.  I used store bought pesto, although making your own is a good option too.

  3. Add some good deli ham and lettuce. 


Notes:  There are not alot of ingredients here, so make each one count.  The better quality ingredients, the better the sandwich.  (It's simple gourmet, not miracle gourmet.)
