Perfect Hot Chocolate

Perfectly chocolatey and delicious!  A must have recipe during cold winter months.

Heat milk in the microwave 2-3 minutes or over medium heat on the stove until hot.

In a blender or the cup of an immersion blender add the chocolate and brown sugar.

Pour the milk over the chocolate.  Let sit 3-5 minutes until the chocolate softens.

Serves 4
4 c (32 oz) whole milk
2 squares (2 oz) unsweetened chocolate (Baker's Brand)
1/2 c (4 oz) semisweet chocolate chips (Hershey's Brand)
3 T brown sugar

Single Serving
1 c (8 oz) whole milk
1/2 square (1/2 oz) unsweetened chocolate (Baker's Brand)
2 T (1 oz) semisweet chocolate chips (Hershey's Brand)
2 t brown sugar

If the milk is being heated on the stove, stir it frequently and be careful not to scald it.

 Blend well.

Add the salt and vanilla and mix well.

Serve hot.

Serves 4
1/8 t kosher salt
1 t pure vanilla extract

Single Serving
pinch of kosher salt
1/4 t pure vanilla extract

The hot chocolate is usually at the perfect drinking temperature after it's blended.  It may need to be reheated if it is served even a few minutes later.

 Problems

substitutions- for the best chocolate taste use unsweetened chocolate bars as called for in the recipe.  Cocoa powder isn't as good.  Hersheys, Ghiredelli, and Bakers brands of chocolate are great.  Other brands I have tried taste more like sugar and wax and less like chocolate.
