Chicken Caprese Flatbread Pizza

I've taken a caprese salad, with fresh tomatoes, balsamic vinegar, and cheese, and turned it into a healthy flatbread pizza with some shredded chicken to fill you up and add some protein.  This is not diet food.  Let's be clear on that.  The tomatoes marinate in garlic and vinegar and taste so good you don't even need the pizza, and this flatbread is my new favorite thing. 

You can buy naan bread in the store, but take it from the worst baker on my block:  you can make this dough.  It turned out on my first try, which is unheard of, and was even fun for my kids.  They each stretched some dough, cooked it on the griddle, and designed a pizza.  I told them it was a pizza bar, and they got to choose everything.  My kid's weren't keen on the fresh tomatoes, but I had some pizza sauce and pepperoni that went like wildfire...  I didn't mind because I got my specialty pizza and everyone was happy. 


     
.Preheat oven to 400 degrees with a pizza stone on the middle rack.  Chop tomatoes and garlic. The pizza stone helps the crust to remain crisp underneath.  A cookie sheet will do the job if you don't have a stone.  Mix oil and vinegar, salt and pepper in a bowl with the tomatoes and garlic.  Let marinate for about half an hour while you cook the chicken and prepare the crusts  Sear chicken.  For complete instructions see curry chicken recipe 
Also cook naan bread by heating 4 pieces on a griddle.  (You can also buy this pre-made at the grocery store.)

The naan bread is normally divided into ten pieces, but for pizza, divide the dough 5 or 6 times.  Unused naan bread can be frozen after it is cooked on the griddle and used for sandwiches, soup dippers, or more pizza.

1 recipe naan bread (flatbread)
4 slicing tomatoes or 8 roma
6 cloves garlic
4 T balsamic vinegar
4 t olive oil, plus more for crust
salt and pepper
1/2 C parmesan cheese or blend
1/2 C mozzarella cheese
1 chicken breast, seared, shredded

     
 Grate the cheeses.  Drizzle the crust with a small amount of olive oil.  Sprinkle parmesan over crust.

     
Add shredded chicken   Top with mozzarella.  Remember to go light.  Heavy toppings will be hard to work with on this crust.   Bake for 10 minutes to crisp up the crust and melt the cheese.  (I use a flat cookie sheet for a pizza peel.)

 
Once you remove the pizza from the oven, add the caprese salad.  Some basil would probably be a good idea to add now too, except that I'm on a basil strike.  My plant died, and I'm still mad about it.  Slice and serve immediately.     

Problems:  This is a thin crust pizza, so heavy sauces and heaps of cheese won't work.  Think light, and you won't have any trouble eating your pizza.

1 recipe naan bread (flatbread)

1/2 C mozzarella cheese
