Very Strawberry Salad

My neighbor makes a killer salad, and I don't really get that excited about salad.  I've had her Summer Salad several times and each time it makes me re-evaluate my NO salad policy.  Okay, so salads aren't really that bad, but they're tedious...and leafy.

 So, while Anne's salad is still the tops, I've altered mine a bit, making it easier for bulk production:  think summer pot luck assignment.  I cut the ingredient list in half and things like getting out a frying pan to crumble bacon were definietly out, but feel free to improvise.  What's left is the basic goodess without much work.  (That's pretty much my motto these days.)  It really is amazing, and thanks, Anne, for all the salads over the years.

Add all dressing ingredients except the poppy seeds to a blender and blend until smooth. Process the poppy seeds on a lower speed until combined. Wash and dry 1 head of romaine lettuce.

Dressing:
5 Strawberries
2 T red onion or 3 green onions
1 clove garlic
1/2 t salt
1/2 t pepper
1/2 t dry mustard
2 t sugar
1/4 C apple cider vinegar
1 C canola oil
1 T poppy seed

Slice 8 strawberries for the salad. Add pecans and feta and toss with salad greens and strawberries. Love it!

Problems:  Too much onion- salad dressing needs to taste a little stronger than you think because it mellows out when tossed in a salad; however, red onion is powerful already, so go easy on the onion and you'll be glad you did.  If you are not fond of onion to begin with, use green onion for a milder version.

Dressing:

6-8 oz feta
1 1/2 C pecans
